Aging: After fermentation, the wine is aged on the lees for eight months.
Tasting Notes: Arguably one of the top Vermentino di Gallura! Straw yellow in color with typical greenish reflections. The bouquet is elegant and refined, showing floral and sweet fruit notes with an evident mineral backbone. Hints of wild pear, mature oranges, and Mediterranean bush. The wine is balanced, with a great structure and a pleasant fruity after-taste. Truly excellent.
Vineyard Notes: Soil type: Predominantly sandy soil from decaying granite. Training system: Espalier.
Production Notes: 40,000 bottles produced. The grapes are pressed without prior destemming. After that the must is clarified through settling and it ferments at controlled temperature in stainless steel tanks. After fermentation, the wine is aged on the lees for eight months.
Winemaker Notes: Lupus in Fabula arrives when everyone talks about it, when everyone expects it. It turns to be unexpected in the taste and the sensations it gives. The saying lupus in fabula is used when a person or a thing arrives at the exact moment when someone is talking about it or him.
Food Pairing: Harmoniously accompanies any dish made with fish or white meat. Also, very good with Pecorino or other strong cheese. Serve at 10° C / 50° F.
