Harvest Date: Hand harvested in the second half of September
Aging: Aged in stainelss steel tanks and refined in the bottle.
Tasting Notes: Bright light ruby red, striking for its transparency which allows the eyes to see through it. On the nose the main theme is red fruit, such as pomegranate, cherry, currant followed by delicate aromas of wisteria flowers and tiny red roses. On the palate the wine is young and fresh. Fine, elegant and fragrant with very light balsamic notes and only a hint of spices such as cloves, juniper and a pinch of pepper. Tasty, balanced and soft finishing with pleasant persistency.
Vineyard Notes: The soil is rich in limestone, tufa and clay.
Production Notes: Grapes harvested in September are pressed immediately. Fermentation and maceration in stainless steel at controlled temperature for 8-10 days. Ageing in steel tanks and in bottle in the dark and cool cellar carved in the tufa below the Vajol hill.
Winemaker Notes: We only produce numbered bottles of the five Valpolicella classical wines: amarone, ripasso, valpolicella classico superiore, valpolicella classico, recioto. All of our five wines feature the five native grapes of Valpolicella classical: Corvina, Corvinone, Rondinella, Molinara and Oseleta. The polyphony of flavours and aromas of the five local vine varieties are safeguarded exclusively in large oak barrels from France and Slavonia. During the long period of refinement these barrels lend just the right balance of wood, preserving and exalting the intense full-bodied aromas of these fruits of the land. We only use 30 or 50 hl barrels to obtain uniquely elegant wines.
Food Pairing: Excellent opening wine from aperitif to appetizers, great with sliced cured meat and pasta dishes. Buffalo Caprese with beefsteak tomato, oregano from Etna, big leaf basil and last harvest EVO oil. Fish is not a taboo: we suggest baked monkfish with new roasted potatoes and cherry tomatoes.
