Aging: 8 months in large casks followed by 6 months of bottle aging.
Tasting Notes: Deep, dark color with purple nuances. Generous yet elegant aromas of balsamic, dried red ripe fruit and jam. On the palate the wine is complex and rich with flavors of ripe red fruit and spices, and the typical high acidity of Bonarda wines.
Production Notes: After the fermentation in concrete the wine spends 8 months in tonneau, followed by 6 months of bottle aging.
Winemaker Notes: This wine comes from our oldest vines with over 50 years of history and it is our flagship wine.
Food Pairing: Because of its lower tannin and higher acidity, Bonarda is a very diverse food pairing wine. It will match well with chicken, beef, pork, and even a more steak-like fish (think: grilled salmon steaks with hoisin BBQ).
