Harvest Date: Hand-harvested in early October
Aging: Aged for 48 in Slavonian casks (botti) and then for a minimum of 12 months in the bottle before release.
Tasting Notes: Brunello! The king of Tuscan wines. Aromas of black plum, star anise and leather come together in this full-bodied red wine. The firm palate offers black cherry, licorice and white pepper notes alongside tertiary notes of leafy undergrowth, mushrooms and lovely mineral hints. A balanced and structured wine with incredible aging potential.
Vineyard Notes: Vineyard location: South-west Montalcino. Soil type: well draining sandy soils with good presence of calcium. Altitude: 300 meters above sea level.
Production Notes: Fermentation at controlled temperatures in stainless steel for 12 days, followed by a 30 day maceration and subsequent malolactic fermentation. The wine is then transferred to Slovenian oak casks where it will refine for 40 months. 8 months of bottle aging before release.
Food Pairing: Pairs wonderfully with grilled meats, wild game and aged cheese.
