Tasting Notes: Very bright and lively soft pink color. The perlage is fine and persistent. Intense on the nose with a predominance of small newly ripened fruits, followed by floral and tropical fruit notes. The palate is fresh, smooth and engaging, pleasantly bubbly and with an intense and persistent finish.
Vineyard Notes: Soil type: clayey, medium-texture. Altitudes: 250-300 meters above sea level.
Production Notes: Charmat Martinotti method, fermentation at low temperature (16-18 C) for approximately one month, left on the lees with batonnage for 4 months
Winemaker Notes: Ciù Ciù wines are the authentic expression of the company’s commitment and tradition, the result of research and quality in both the vineyard and in the cellar, but also of a natural wine-growing ecosystem of quality with a “terroir” (microclimate, soil and subsoil) that is unique and irreplaceable.
Food Pairing: Excellent aperitif to be paired with cured meats and non-matured cheeses. It also pairs well with fish appetizers, seafood risotto, and fried fish.
