Aging: Short aging on its fine lees for a natural stabilization of the wine and to obtain a better harmony of tastes.
Tasting Notes: Made with one of the most interesting indigenous grapes of Sardinia, Nuragus, this wine is full of charm! Straw yellow in color. Fragrant aromatic nuances of melon, honeysuckle and essential herbs with a rich flavor and pleasant softness. A hidden gem from the southern part of the Island and a perfect companion for Mediterranean recipes.
Vineyard Notes: Vineyard location: Acquasassa Estate, south side in Serdiana. Soil Type: clay-limestone soil. Altitude: 160 meters above sea level. Average age of the vines: 15 years. Training system: espaliered bushes. Density: 5,000 plants per hectare. Yield: 70-80 quintals per hectare.
Production Notes: Pressing in pneumatic presses with very soft action, the must is cold-clarified by natural decanting. Fermentation in stainless steel vats at about 16°C, in order to enhance its original characteristics. Left to develop on its lees before bottling.
Winemaker Notes: The light is the white and blinding light of the islands, and this city, Serdiana, is an island inside an island, surrounded as it is by water and reflection. Here, the wind mixes up the perfumes of sea and land, telling tales of adventures and walls to climb. The sun comes down and people listen, sitting on the promenade, with a glass of light in their hand.
Food Pairing: Fregola (small balls of semolina) and Sardinian little gnocchi (malloreddus) prepared the Carlofortina way (pesto, basil, olive oil, cherry tomatoes), semi cured cheeses. Sea bass with vernaccia wine, capon with potatoes and fresh cherry tomatoes.
Other Notes: Audarya means “nobility of the soul”, in an ancient oriental language. It’s the name of our company because at the center of what we are there is respect. We make wines tied to the territory, with native grape varieties, but modern, for a spirited and curious public.
