Harvest Date: Hand-harvested in September
Aging: Long Charmat method. Aged for 4 months in stainless steel tanks and 1 month in bottle.
Tasting Notes: This elegant Prosecco is characterized by inviting aromas of citrus fruit, especially tangerine and grapefruit, fresh vegetation and a note of rustic mint. The mouth is wide, creamy, full of fresh fruits, with a firm acidity that provides a crisp, lingering finish of lime, mineral and almond. The very low sugar residue reveals all the superb Prosecco taste.
Vineyard Notes: Vineyard location: Fol Vineyard, Valdobbiadene. Soil type: sandstone and conglomerates of rock and sand.
Production Notes: Charmat Method fermentation. Aged for 4 months in stainless steel tanks and one month in the bottle before release.
Winemaker Notes: From Prosecco’s historical heartland Follo (or Fol as locals call this scenic little town) a serious selection of 100% Prosecco (Glera) grapes from our vineyards. To improve on the standards set by our founder Paolo Zucchetto in the mid seventies we have implemented new, more recently developed technologies in our winery. As always we avoid the use of additives and extracts, and minimize the need for sulphites. In addition, in our vineyard we continue to adopt sustainable and ecological practices.
Food Pairing: Perfect on its own as an aperitif for any occasion. Pairs wonderfully with pasta, simple or elaborate fish plates and vegetable hors d’oeuvres, or… enjoy it throughout the entire meal!
