Harvest Date: Hand-harvested in the first week of September
Aging: Aged in stainless steel tanks and then in the bottle 24 months on lees.
Tasting Notes: This wine is made by combining the French and the Italian clones of Sauvignon. The color shows greenish glares. On the nose, strong and aromatic scents of white peach, apricot, green peppers, sage, tomato leaf. On the palate it is delicate, yet sharp, savory and persistent keeping the expectations given by the scents.
Vineyard Notes: The soil of this area is composed by mixed layers of marl and sandstone, so-called “ponca” which is rich in limestone and silica. The vineyards are 100 meters above sea level.
Production Notes: The fermentation is done without skin contact, at a temperature of 20°C, and no malolactic fermentation. It is aged in steel tanks and then in the bottle for 24 months on its own lees. This wine will continue to age well.
Winemaker Notes: The most classic among the aromatic varietals, which found a perfect home in the Collio area. This Sauvignon Blanc represents our history and it has been, since the beginning, one of our most awarded wines thank to our original and unique interpretation of this varietal. We present you a wine with a strong “tipicity”, enveloping elegance, extremely balanced… and never arrogant!
Food Pairing: Pair with Sushi, Sashimi and shell-fish. Ideal with any asparagus based dish, soups and omelettes with herbs.
