Harvest Date: Hand-harvested in the first week of September
Aging: Stainless steel – No oak.
Tasting Notes: On the nose it evokes aromas of plum, apricot, yellow flowers, lemon peel, Mediterranean scrub, all accompanied by a beautiful mineral note. The flavors profile perfectly matches the olfactory experience. It is medium-bodied, with a lively freshness and a long sapid finish.
Vineyard Notes: The soil of this area is composed by mixed layers of marl and sandstone, so-called “ponca” which is rich in limestone and silica. The vineyards are 100 meters above sea level. Average age of the wines is 20 years.
Production Notes: The fermentation is done without skin contact, at a temperature of 20°C, and no malolactic fermentation. It is aged in steel tanks and then in the bottle for 24 months on its own lees. This wine will continue to age well.
Winemaker Notes: Dry and pleasant wine with a low alcohol content. The name Ribolla “Gialla” derives from the yellow color of the grape when ripe. It is a rigorous vine, resistant to diseases and with a late bed, while its grapes ripen quickly and are rich in must. With a persuasive bouquet, it recalls the aromas of the forest, acacia, the flavors of chestnut and geranium leaf.
Food Pairing: It is recommended for cold appetizers, with sour or sweet and sour sauces, soups, especially velvety creamy soups, vegetable-based first courses, and fish dishes with sauces. Also great with shellfish, oysters and sea truffles.
