Production Notes: After a short maceration process at low temperature, it is fermented at a controlled temperature of 13-14 ° C, for about 20 days. Subsequently, the wine ages in stainless steel tanks for at least 3 months before being bottled.

Food Pairing: Recommended in combination with fish, crustaceans and molluscs, this rosé wine is a delightful choice to accompany unseasoned cheeses and white meats as well. As an aperitif, Salento Rosato is par excellence.

Other Notes: The Negroamaro grape is a dark skinned grape, growing almost exclusively in the Salento area. It was introduced by the Greeks since the seventh century BC, when the Hellenic colonists arrived on the Italian coasts and founded numerous towns there. This makes the ancient vines over 1500 years in existence. It is believed the name “Negroamaro” derives from the dialect “niaru maru” which translates to bitter, black, describing 2 of its wine’s characteristics: dark grape and high levels of tannins. It is also believed that the name Negroamaro is a union of Latin (niger) and Greek (mavros), which simply translates to its grape color “black-black”.
