Harvest Date: Hand-harvested at the beginning of September
Aging: After the fermentation, the wine ages in a cool oxygen-free environment for seven months.
Tasting Notes: The Cavè from Tenute Olbios is a rosè wine obtained from the maceration of red grapes vinified as white grapes. Beautiful light cherry color. The nose is mostly floral with a refined and pleasant scent of rose petals and wild violets. On the palate, flavors of pomegranate and blackcurrant. Fresh and elegant taste with a good acidic balance.
Vineyard Notes: Predominantly sandy soils derived from decaying granite with a light clayish layer. Training system: Espalier.
Production Notes: Very limited production: 3.300 bottles. The grapes harvested late in the evening, are immediately destemmed and subjected to skin maceration for 8 hours overnight. The grapes are then pressed and the must is slowly fermented in stainless steel tanks under controlled temperature. After the fermentation, the wine ages in a cool oxygen-free environment for seven months.
Winemaker Notes: This is a rose wine obtained by from the overnight maceration of the grapes. Cherry pink color, fresh scent of spring, enveloping like a warm night, light an elegant as the flight of a falcon.
Food Pairing: Excellent as an aperitif and as a wine for any meal. Accompanies well any kind of fish dish, especially soups, couscous and fried fish. Serve cold at 6°-8° C / 42° – 46° F.
