Harvest Date: Hand-harvested in small boxes in the second half of September.
Aging: The wine is left for 18 months in stainless steel tanks to refine and settle at cool temperatures without prior filtration. It ages then for another 12 month in french oak barrels.
Tasting Notes: This wine is very modern in style. Bright-red, deep yet clear color. Intensely perfumed, with complex and rich spicy nuances coming from both the varietals and the Allier oak aging barriques. Elegant in the mouth, with fragrant notes of small red berries. The slight natural acidity enhances its crispness, making it ideal for every occasion.
Vineyard Notes: Predominantly sandy derived from decaying granite with a light clayish layer. Espaliered vines.
Production Notes: Limited production: 7,000 bottles. Delicate destemming and immediate temperature-controlled fermentation in stainless steel tanks in order to preserve the varietal aromas of the grapes. Frequent automatic délestage, racking and vacuum pressing of the fermented grapes. Winemaker Notes: CanGrande 17 is the latest wine created by Tenute Olbios. The name pays tribute to the prestigious Vinitaly CanGrande award they have received in 2017. The owner and winemaker Daniela Pinna was recognized as Winemaker of the Year for the Sardinia region. The label titled “Wolf like me” is a work of Andrea Ambrogio better known as “Gemello”, a rapper and Italian painter.
Food Pairing: It pairs with medium structure dishes, pumpkin creamy soups and vegetarian meals in general. Great with beef tartare and beef fillet, but also with fish courses on succulent sauces, or simply as an aperitive with a board of cheese and cured meat. Serving temperature 12° – 14° C.
