Harvest Date: Hand-harvested at the beginning of September
Aging: 27 months refinement “sur lie” in the bottle.
Tasting Notes: This is a wine made in honor of the tradition and the history of Sardegna. Straw yellow color with very fine and consistent perlage. The bouquet is concentrated and expressive with floral aromas followed by fruity and pastry-like nuances. Very fresh on the palate with a genuine and persistent finish.
Vineyard Notes: Predominantly sandy soil from decaying granite. Espalier training system.
Production Notes: Limited production: 6,700 bottles. The free run must, clarified within 12 hours, is slowly fermented under controlled temperature. Subsequently it undergoes a second fermentation in the bottle where it stays on the lees for 27 months.
Winemaker Notes: Sparkling white wine vinified with the classic method and obtained from Vermentino grapes from our vineyards. It is the result of extensive research on the methods of sparkling wine and the secrets of different recipes. The long aging has softened the harshness of Vermentino and ennobled its qualities. The second fermentation in the bottle and the slow remuage have exalted tones and scents.
Food Pairing: Serve between 6 and 9 degrees Celsius in a chilled champagne flute. Perfect for an aperitif or to accompany cheese at the end of a meal.
