Harvest Date: Hand-harvested between September and October
Aging: 50% aged in French barriques and 50% in amphora for 18 months, followed by 6 months of refinement in the bottle.
Tasting Notes: Ruby red color with garnet hues. On the nose it is complex and seductive offering an explosion of perfumes that go from red fruit, to blackberry and violets followed by elegant balsamic notes and hints of coffee and liquorice. A soft wine, warm and persistent, with silky and well rounded tannins.
Vineyard Notes: Vineyard location: on the hills in the municipality of Prepotto. The vines are between 15 and 30 years old. The soil type is the typical “ponca”. Yield is about 60 quintals/ha.
Production Notes: After pressing just the best grapes, the must is left to macerate with the skins for about 20 days at controlled temperature. After that the wine is moved into wooden vats where the malolactic fermentation takes place.
Food Pairing: Perfect with charcuterie and pasta dishes with meat sauce, roasted, grilled and braised meats, seasoned cheeses.
