Harvest Date: Hand-harvested between September and October.
Aging: 50% aged in French tonneaux and 50% in amphora for 18 months, followed by 6 months of refinement in the bottle.
Tasting Notes: Ruby red in color, this is a wine of great structure with an ample, fruity and spicy bouquet which evolves with time. The scent of blackberry and maraschino cherry is followed by gentle notes of light toast, tobacco and vanilla, adding complexity and intensity to the wine. The palate is structured and decise, with round tannins thank to the time in amphora and wood.
Vineyard Notes: Vineyard location: on the hills in the municipality of Prepotto. The vines are between 15 and 20 years old. The soil type is the typical “ponca”. Yield is about 60 quintals/ha.
Production Notes: After pressing just the best grapes, the must is left to macerate with the skins for about 20 days at controlled temperature. After that the wine is moved into wooden vats where the malolactic fermentation takes place.
Food Pairing: Particularly great with eggs and bell peppers based dishes. Also pairs well with delicate fresh cheeses such as Ricotta, Fiordilatte and also filled pasta (such as Ravioli Ricotta e Spinaci) and with structured red meat dishes.
