Harvest Date: Mid/End of September – by hand.

Aging: Aged in stainless steel for 3 months followed by a short aging in small oak tonneaux and final refinement in the bottle.

Tasting Notes: The color is purple red with intense ruby reflections; in certain rare years it could remain impenetrable to the eye like a deep purple ink. On the nose it is like walking on a carpet of roses and violet petals with intriguing hints of ripe fruits such as sour cherry, strawberry, currant, prune, raspberry, blackberry syrup along with notes of date and fig. Aromas of wood, resins, tobacco and spices take a leading role and add complexity. On the palate it stands out for its consistency especially on the fruity side. Extremely pleasant and balanced, gently harmonious and never too sweet, delicately tannic. A persistent harmony of flavors to be remembered for a long time.

Vineyard Notes: The soil is rich in limestone, tufa and clay.

Production Notes: The fermentation and maceration process in stainless steel tanks lasts 30-40 days at controlled temperature. Ageing in steel for 3 months followed by a short ageing in small oak barrel and final refinement in the bottle.

Winemaker Notes: We only produce numbered bottles of the five Valpolicella classical wines: amarone, ripasso, valpolicella classico superiore, valpolicella classico, recioto. All of our five wines feature the five native grapes of Valpolicella classical: Corvina, Corvinone, Rondinella, Molinara and Oseleta.
The polyphony of flavours and aromas of the five local vine varieties are safeguarded exclusively in large oak barrels from France and Slavonia. During the long period of refinement these barrels lend just the right balance of wood, preserving and exalting the intense full-bodied aromas of these fruits of the land. We only use 30 or 50 hl barrels to obtain uniquely elegant wines.

Food Pairing: Perfect with very mature, strong flavored or veined cheeses. Favorite as dessert wine. Particularly suitable for tarts, almond cantucci cookies, extra dark chocolate. Excellent especially pure as aperitif before dinner or as a sweet closing note after dinner. A meditation wine. Sweet quintessence of the land, ancient hospitality wine known since Roman time, it is a timeless nectar to be savored in any special moment of life in particular in the company of the angel that is an expected or unexpected guest knocking at the door.
