Description: In order for this pecorino cheese to be considered an authentic DOP Tuscan Fresco Pecorino cheese by law it must be made of 100% sheep’s milk from Tuscany produced only between the month of September and June.
The paste is compact and straw-coloured. With a sweet but firm taste of sheep’s milk. The flavours and perfumes are well developed and well balanced.

Ingredients: Pasteurized sheep’s milk, indigenous enzymes, rennet and salt.

Specifications: From Tuscany (Italy), aging 20-30 days, rind not edible

Pairing: Chardonnay, Riesling
