Harvest Date: Hand-harvested at the end of September for the Merlot and in the first half of October for the Cabernet.

Aging: Aged for 12 months in first and second passage barrels.

Tasting Notes: Dense ruby red in color. Aromas of red fruits, blackberry and prune, licorice and pepper, graphite and resin. On the palate, the wine is enveloping and full-bodied, with composed tannin, supported by freshness and minerality. The finish is long and persistent.

Vineyard Notes: Vineyard location: Ronco 75%, Morello 25%. Soil type: clay, silt-like soil (ancient red earth), not very fertile. Altitude: 190-210 meters above sea level. Training system: Guyot growing system 60%, Casarsa 40%.

Production Notes: Soft pressing of the whole grapes followed by fermentation which takes place at a temperature of 28-30 C. and aged for 12 months in first and second year barrels. No clarification and no filtration. The wine is bottled about 15 months after the harvest.

Winemaker Notes: A very structured still red wine, born of classic Bordolese grapes, developed in a unique perso- nal way. This is a concentrated, powerful wine, elegant and smooth, with a composed character that reflects our land and our climate. The care of the vineyard, the wine making process and the ageing process are all under the same aegis: to obtain a Cabernet Sauvignon with a classic character but a profoundly Italian soul, from Piacenza, above all else.

Food Pairing: Perfect with red meat, wild game and very aged cheeses.
