Harvest Date: Hand-harvested between the end of September and first half of October
Aging: Aged for 36 months in oak tonneaux followed by four months of bottle aging before release.
Tasting Notes: Prezioso, AKA the Precious one, is dark ruby red in color. On the nose it has spicy notes with a prevalence of cinnamon and vanilla, evidently connected to the barrel ageing. Hints of Morello cherry, plum and violet. The taste is full, harmonious and warm. Good structure with elegant tannins from the barrel aging and bottle refinement.
Vineyard Notes: Vineyard location: San Casciano dei Bagni, Siena. Soil type: mix of Alberese and Galestro, rich in clay. Yields: 6 tons per hectare.
Production Notes: Fermentation in wood tanks at controlled temperature with selected yeasts. Maceration post fermentation of 10/15 days. Aged in French oak barrels for 36 months and then in the bottle for 4 months. Can be stored for 2–3 years.
Winemaker Notes: This wine brought us a great deal of satisfaction with many awards including being judge more than once as “Miglior Vino d’Italia” (Best Wine of Italy) by Luca Maroni. With its extreme high quality, the beuatiful and elegant packaging, Prezioso represents the present of Cantine Ravazzi. The perfect bottle for a special occasion or for a gift for somebody special.
Food Pairing: Best paired with roasted meat, and aged cheese. Please serve in balloon-shaped wine goblets to do it justice.
