Harvest Date: Hand-harvested in the first decade of October
Aging: After refining only the first press wine in stainless steel temperature controlled vats, the wine is bottled and aged in the wine cellar at 70% humidity with very little exposure to light and temperature fluctuations.
Tasting Notes: Meet the King of Sardinia’s grapes: Cannonau. The Audarya Cannonau has a beautiful intense ruby red color. Slightly spicy aroma with hints of ripe red fruit followed by earthy and truffle notes. Well-structured, warm and persistent. A pleasant, medium-bodied wine that you can enjoy every day!
Vineyard Notes: Vineyard location: Audarya Estate Vigna “Is Crabilis” in Ussana. Soil type: calcareous-clay. Altitude: 160 meters above sea level. Exposure: N/A. Average age of the vines: 25 years. Training system: espaliered bushes. Density: 5,000 plants per hectare. Yield: 50-60 quintals per hectare.
Production Notes: Long maceration of about 30 days at controlled temperature 25°c / 77° F. Malolactic fermentation followed by refinement of only first-press wine in stainless steel temperature-controlled vats in order to enhance its original character.
Winemaker Notes: If there is anyone who deserves to be called king, that’s him: a strong and elegant sovereign, proud and noble, respected and loved. He knows how to live, the king, a deep and meditative thinker, the knowledge of making his own history. His majesty, the cannonau.
Food Pairing: Pair with cured meats, first courses with tasty condiments, mature or medium Sardinian pecorino cheese. Roast pig or lamb with myrtle and juniper berries, beef with sauce and wine. Serve at 16°-18°c / 60° – 64° F. Ages well, please store properly.
Other Notes: Audarya means “nobility of the soul”, in an ancient oriental language. It’s the name of our company because at the center of what we are there is respect. We make wines tied to the territory, with native grape varieties, but modern, for a spirited and curious public.
