Harvest Date: Hand-harvested between September and October
Aging: Aged for 18 months in French tonneaux followed by 6 months in the bottle.
Tasting Notes: Intense ruby red color. Aromas of cherry and ripe red fruit with a delicate spicy scent, also present on the palate, very typical of the varietal. On the palate it is fresh and savory, with a good tannic structure, yet soft and harmonious.
Vineyard Notes: Vineyard location: on the hills in the municipality of Prepotto. The vines are between 10 and 15 years old. The soil type is the typical “ponca”. Yield is about 60 quintals/ha.
Production Notes: After pressing just the best grapes, the must is left to macerate with the skins for about 20 days at controlled temperature. After that the wine is moved into wooden vats where the malolactic fermentation takes place.
Winemaker Notes: My relationship with wine is based on the fascination that everything that is enclosed and preserved in it, transmits to me. When I taste a wine, I am excited to think about the wine making tradition of the place where it is produced, the diversity of the soils and the work of man… the full expression of the terroir.
Food Pairing: This elegant yet structured wine is a perfect match with red meat and with medium/strong cheeses. Also great with game and dishes which are rich of herbs and spices…. Or a perfect meditation as well.
