Harvest Date: Hand-harvested between September and October
Aging: Aged 50% aged in French tonneaux and 50% in amphora for 12 months, followed by 6 months of refinement in the bottle.
Tasting Notes: Beautiful yellow gold in color. On the nose the wine is delicate but intense reminiscent of yellow apple, dried fruit and honey. On the palate it is dry and soft, with a great balance of acidity and minerality and a lingering finish.
Vineyard Notes: Vineyard location: on the hills in the municipality of Prepotto. The vines are between 15 and 50 years old. The soil is the typical “ponca”. The yield is about 60 quintals/ha.
Production Notes: After pressing just the best grapes, the must is left to macerate with the skins for a few days. As soon as the “cappello is alza” the must which is still fermenting gets separated from the skins and the refinement takes place in cement vats.
Food Pairing: This wine is very versatile and pairs well with a vast range of food. It is perfect with Asian cuisine, with savory meat dishes and also with blue cheeses and seasoned cheeses.
