Aging: Refined in the bottle for 3 months. Stainless steel – no oak.
Tasting Notes: It has a straw-yellow colour sometimes with golden reflexes, but always with greenish hues. Its bouquet, intense and personal, reminds of sage and of the characteristic tomato-leaf and has a well balanced range of aromas. It has a dry taste with a consistent and generous structure.
Vineyard Notes: Vineyard location: Collio. Soil type: marls and stratified sandstones of Eocene origin, vineyards facing south.
Production Notes: Light pressing, purification of the must and fermentation without marc at controlled temperature.
Food Pairing: It goes well with risotto of firstlings, soups and first elaborate and nourishing dishes. It is particularly suited to accompany sea fruits and shellfishes.
Other Notes: In the Friulian language Pecòl has two meanings: “Stem” and “Hill.” Pecòl refers to the hilly origin of the lands of the Province of Gorizia, particularly suited to the wine production and denominated “Collio.”
