Harvest Date: Hand-harvested in the last decade of October
Aging: After refining only the first press wine in stainless steel temperature controlled vats, the wine is bottled and aged in the wine cellar at 70% humidity with very little exposure to light and temperature fluctuations.
Tasting Notes: Intense ruby with a typical Monica purple undertone. The nose is intense and yet delicate with notes of reds fruit such as raspberry and strawberry, complicated by fresh herbs, which is a typical characteristic of this varietal, and hints of tar and tobacco . The wine is fresh with a pleasant softness and very balanced.
Vineyard Notes: Vineyard location: Audarya Estate Vigna “Audarya” in Serdiana. Soil type: clay-limestone. Altitude: about 200 meters above sea level. Exposure: N/A. Average age of the vines: 20 years. Training system: espaliered bushes. Density: 5000 plants per hectare. Yield: 60-70 quintals per hectare.
Production Notes: Cold maceration of the grapes. Fermentation in stainless steel vats for 15-18 days at about 23°. Short aging on its fine lees in order to obtain a natural stabilization of the wine
Winemaker Notes: There is nothing better than listening to tales than accompanying them with a glass of wine. The better the wine, the more intriguing the tale; the more intriguing the wine, the better the tale. And this tale tells about a red wine to which everyone asked why it was called like a woman. The wine answered from the glass with a smile, thinking about all the stories that could be told.
Food Pairing: Pasta with grouper, meat sauce and chili tomato sauce. Tuna steak, lamb stew and goat cheese.
Other Notes: Audarya means “nobility of the soul”, in an ancient oriental language. It’s the name of our company because at the center of what we are there is respect. We make wines tied to the territory, with native grape varieties, but modern, for a spirited and curious public.
