Harvest Date: Hand-harvested in the second decade of October
Aging: Aged for 12 months in small oak vats.
Tasting Notes: A delicious and decadent wine from a rare native grape of Sardegna: Bovale. Deep ruby red in color. Aromas of sweet spices and small red fruits tending towards preserves. Harmonious and well-balanced. Soft and warm on the palate with good tannic structure and a lingering, voluptuous finish.
Vineyard Notes: Vineyard location: Audarya Estate Vigna “Audarya” in Serdiana. Soil type: Clay-limestone soil. Altitude: 160 meters above sea level. Exposure: South-West. Average age of the vines: 30 years. Training system: espaliered bushes. Density: 5000 plants per hectare. Yield: 35-40 quintals per hectare.
Production Notes: Maceration at controlled temperature, followed by alcoholic fermentation at 24° C. The malolactic fermentation occurs in small oak vats, where the wine completes its refinement cycle during the following 12 months.
Winemaker Notes: In the area where the vineyards are located there used to be an ancient village: Nuracada. Here is where we brought back and now grow a very special indigenous grape of Sardegna: Bovale Sardo, of which, this wine is a pure expression. Nuracada has a taste of centuries and history, of the people who once inhabited this land with notes of passion, willful and respect.
Food Pairing: Pairs well with red meat, roasts, sausages, cured meats and seasoned or blue cheeses. Wonderful also as a meditation wine on its own.
Other Notes: Audarya means “nobility of the soul”, in an ancient oriental language. It’s the name of our company because at the center of what we are there is respect. We make wines tied to the territory, with native grape varieties, but modern, for a spirited and curious public.
