Harvest Date: Hand-harvested in small boxes in the second half of September.
Aging: Maturation for 14 months in steel containers with cold decantation without prior filtration. Refinement in the bottle follows.
Tasting Notes: Amur releases fragrant nuances of dark berries, currants, myrtle, juicy blackberries, hints of thyme and graphite. Dry and round, the gentle tannins give structure and confirm the character of the Muristellu grapes, together with its lively freshness. A red that seduces the palate, with a very pleasant sip.
Vineyard Notes: Predominantly sandy derived from decaying granite with a light clayish layer.
Production Notes: Delicate destemming and immediate cold-controlled temperature fermentation in stainless steel tanks in order to preserve the varietal aromas of the grapes. Frequent automatic délestage, racking and vacuum pressing of the fermented grapes.
Winemaker Notes: The vineyards are cultivated implementing an integrated farming system which does not use herbicides, treatments are limited and carried out exclusively with products having a low environmental impact. The company holds SQNPI (National Integrated Crop Management Quality System) certification and Green Care certification, to reduce water and electricity consumption. The plants are not irrigated, unless under emergency conditions, and this means that their roots burrow down into depths of the ground seeking water and absorbing mineral salts and character from the granitic and sandy soil. The vineyards are still farmed in the traditional way, pruned by hand and tied using biodegradable and natural materials. The grapes are harvested by hand and taken in small crates to our winery. There is no use of products or by-products of animal origin either in the vineyards or in the winery: our wines are 100% Vegan.
Food Pairing: It pairs with medium structure dishes, pumpkin creamy soups and vegetarian meals in general. Great with beef tartare and beef fillet, but also with fish courses on succulent sauces, or simply as an aperitive with a board of cheese and cured meat.
