Harvest Date: Hand-Harvested in late August – early September
Aging: 7 months on the fine lees with batonages.
Tasting Notes: Pale straw to golden in color. Herbal notes, sweet basil leaf and white stone aromas that accent a clean, lean and fresh mouthfeel. This is a quaffable, easy-to-enjoy wine.
Vineyard Notes: Vineyard location: vine varieties Morello, Sorriso and Cà di Terra. Soil type: clay, silt-like soil (ancient red earth), not very fertile. Altitude: 180-210 meters above sea level. Training system: Casara growing system 50%, GDC 35%; Spurred Cordon 15%.
Production Notes: Soft pressing of the whole grapes followed by fermentation which takes place at a controlled temperature of 15-16 C. After that the wine rests for 7 months on its fine lees with batonages and the bottling happens in May.
Winemaker Notes: This wine simultaneously expresses some of the particular characteristics of the Sauvignon vine variety and the typical character of our territory: a Sauvignon with an aroma of elderberry, tomato leaves and peaches, with hints of citrus and a mineral undertone, less spiced and green and more composed and complex in respect to the typical Friuli-Altoatesine notes, with a rich structure and balanced taste, and significant persistent aftertaste. A Sauvignon that is complex, expressive and personal.
Food Pairing: Pair it with appetizers (hearty), first and second courses with vegetables and fish, with light white meats served with vegetables.
