Harvest Date: Hand-harvested in the first decade of September
Aging: Stainless steel – no oak.
Tasting Notes: This is desert wine made of overripe white grapes . The color is an intense golden yellow. On the nose dehydrated apricot, wildflower honey and Mediterranean maquis. On the palate the wine is sweet and well-balanced, with a natural freshness due to the overripe.
Vineyard Notes: Vineyard location: Serdiana. Soil Type: clay-limestone soil. Altitude: 200 meters above sea level. Average age of the vines: 20 years. Training system: espaliered bushes. Density: 5,000 plants per hectare. Yield: 35/40 quintals per hectare.
Production Notes: The raining happens naturally, by cutting the fruiting cane on the fruiting vine. Maceration on the skins for 36 hours, soft pressing and slow fermentation in stainless steel temperature control vats.
Winemaker Notes: The sweet side of our Vermentino.
Food Pairing: Almond based sweets, pine nut and raisin.
Other Notes: Audarya means “nobility of the soul”, in an ancient oriental language. It’s the name of our company because at the center of what we are there is respect. We make wines tied to the territory, with native grape varieties, but modern, for a spirited and curious public.
